Ground breaking, I know. What you might not know is that we are currently spending a month in Mexico City, where avocados are as abundant on street corners as Starbucks in New York City. 

While it has only been about two weeks here in a different country, the cravings of back home are real. It’s a bit underwhelming to assume avocado toast is a product of the U.S.A but this doesn’t discredit that every other menu has sported their own version of avocado toast at one point or another. To be perfectly honest, avocado toast just makes sense; healthy fats, yummy bread, overarching cool-ness…

This isn’t so much a recipe as it is an ode to the simplicity of food and availability of local ingredients- wherever you are in the world. Here in Mexico city we are taking advantage of the remarkably low pricing of avocados and the abundance of local bakeries around Roma Norte. After finding a lovely little local bread store I found myself waiting there most mornings for the delivery of freshly baked bread via a tiny guy on a bicycle. With the determination of getting the first dibs on this bread that seemed to be made in someone's apartment and then pedaled across town, I truly felt it would be irreverent to do anything to this bread more than what was needed; hence Avocado toast. 


So, my friends, in lieu of going big or going home- start simple and make room for bigger things later. Sometimes going back to the basics, resetting expectations, and strengthening your foundation (yes, this inspiration is from Avocado Toast) is the best thing you can do for your overall health.

Preparation: 10 min

(Depends on how fast the bicyclist comes with the bread)


Slice your avocados for beauty not taste. It’s important, be one with the avocado, see what it can do for you. Toast your bread (I rubbed a bit of raw garlic on the toast). Boil some 6 1/2 min eggs; the jammier the better. Saute some mushrooms (or whatever veggie you have on hand). Make a sweet avocado toast with fresh fruit or a fun almond/ honey spread like I did.

  • Fresh bread of your choice 
  • Eggs
  • Salt & Pepper
  • Olive Oil
  • Mushrooms
  • Onions
  • Almond/ honey spread for drizzling
